Banana Pudding Dessert Cups

This is my favorite way to use two old bananas. I believe that portion control is essential when it comes to dessert.

The recipe I share below will make four dessert cups that can be stored in the refrigerator for up to 5 days.

Do I need a boxed mix for Banana Pudding?

No! It’s surprisingly simple to make this pudding from scratch. A boxed mix is convenient, but making it yourself is a great way to have more control over the ingredients. This recipe has seven ingredients that you should always have on hand.

After experiencing the bare shelves in supermarkets last year, I’m a firm believer in having the basics stocked and learning to make as much as possible from scratch. I do not want to be the victim of supply chain issues.

Sticking to the basics and keeping things as simple as possible is also essential because nothing leads to waste more than time-consuming recipes that are difficult to execute. I hate finding expired boxes of pudding or jello mix in the back of the pantry during my spring cleaning!

How to Make Banana Pudding Dessert Cups

With a few simple ingredients, you can make these banana pudding dessert cups. All it takes is sugar, flour, eggs, milk, butter, vanilla extract, and ripe bananas.

Never Waste a Banana Again!

  • Sugar
  • Flour
  • Eggs
  • Milk
  • Butter
  • Vanilla extract
  • Mashed Ripe bananas

First, whisk the eggs in a medium saucepan. Then add in flour and sugar, and mix well. Mix in the milk and cook over low heat, stirring continuously.

Once thickened, remove from heat and mix in vanilla and butter. Then mix in mashed bananas. Divide pudding into four small mason jars. Chill for at least 1 hour before serving. If you’re feeling fancy, you can garnish with banana slices or nilla wafer crumbs. 

Making these cups on a Sunday afternoon brings a sense of peace and calm to my week. I know I have a sweet treat in the fridge, ready for any busy evening. Isn’t it amazing how the “little things” can make all the difference?

Ingredients

  • 3/4 cup granulated sugar
  • 1/3 cup flour
  • 3 eggs
  • 2 cups milk
  • 2 tbsp butter, softened
  • 1 tsp vanilla extract
  • 2 bananas, ripe

Instructions

  • In a medium saucepan whisk eggs well. Add in flour and sugar.
  • Mix in milk and cook over low heat, stirring continuously.
  • Once thickened, remove from heat and mix in vanilla and butter. Then mix in mashed bananas.
  • Divide pudding into four small mason jars. Chill at least 1 hour before serving, garnish with banana slices or nilla wafer crumbs.

Notes

  • Store in individual mason jars for 3-5 days in the refrigerator.
